As seasoned veterans in the wine, beer, and cider industries, Jac and Mathew have witnessed it all – the triumphs, the challenges, and the ever-evolving landscape of craftsmanship and innovation. Their journey began with a shared love for the art and science behind these beverages, leading them to hone their skills and knowledge through hands-on experience in wineries, breweries, and orchards across the globe.

Meet Jac
Jac Jacobs is a veteran Winemaker with an illustrious career spanning four decades in the wine industry. With an unparalleled depth of experience, Jac has left an indelible mark on both the North Coast and Central Coast wine regions, renowned for his commitment to crafting wines that embody true varietal character and exceptional quality.
Throughout his career, Jac has specialized in producing a diverse range of wines, from full-bodied reds with a velvety balance of tannins to dry, fruity whites, as well as sparkling wines, dessert wines, ports and ciders. His dedication to his craft has been recognized with numerous accolades, including gold, double gold, and best of class medals. Notably, one of his wines was selected and served at the White House for a presidential state dinner.
Jac's journey in winemaking has afforded him the privilege of working alongside some of the industry's most esteemed figures, including Andre Tcheischeff, John Parducci, Bob Iantosca, and Michael Topolos. From these legends, Jac has cultivated a passion for producing wines of the highest quality, a passion he continues to infuse into every bottle.

Mathew Jacobs is a seasoned winemaker, brewer and cider maker with a passion for pushing the boundaries of innovation in the world of craft beverages. Mathew has become respected for his expertise in fermentation science, sensory profiling, and crafting unique offerings that captivate the senses.
As the son of a Winemaker and a Chef, Mathew was born with a fascination for the art and science of flavor that set him on a path towards mastering the craft. He honed his skills through years of hands-on experience in breweries and wineries, immersing himself in every aspect of the production process, from vineyard site selection to perfecting fermentation techniques.
As the co-founder of Jacobs Consulting, Mathew is dedicated to sharing his wealth of knowledge and expertise with artisans in the industry. He believes in the power of collaboration and thrives on the opportunity to work closely with clients to bring their visions to life.
